Ingredients

Pickled Red Onions

  • 1 large red onion, thinly sliced
  • 3/4 cup apple cider vinegar
  • 1 tablespoon honey or granulated sugar
  • 1 teaspoon kosher salt

Pork Belly Burnt Ends

  • 3 lbs pork belly, skin removed and cut into 1-inch cubes
  • 1/4 cup BBQ seasoning or dry rub
  • 1 stick unsalted butter, cut into pieces
  • 1/2 cup light brown sugar
  • 1/4 cup honey
  • 1 cup BBQ sauce

Instructions

1. Prepare the Pickled Onions

Warm the vinegar, honey (or sugar), and salt in a small saucepan until dissolved.
Add sliced onions to a jar and pour the hot liquid over them.
Let sit for 90 minutes to soften and develop flavor.

2. Smoke the Pork Belly

Preheat smoker to 250°F. Coat pork belly cubes with BBQ seasoning.
Arrange on smoker grates and cook for 2.5–3 hours until deep mahogany.
Spritz with apple juice if needed.

3. Braise and Caramelize

Transfer cubes to a foil pan. Add butter, brown sugar, and honey.
Cover with foil and cook for 1 hour.
Drain excess liquid, add BBQ sauce, and cook uncovered for 15–30 minutes until sticky.

4. Rest and Serve

Let rest for 15 minutes.
